Cheesecake is on my list of the most delicious deserts i have ever eaten and cooked. The combination of crunchy crust, fluffy cream cheese and different types of toppings make this dessert seems like a little piece of heaven to me. You probably ate a few slices of cheesecake by now so you understarnd what i’m talking about.

Cheesecake
Cheesecake is a mighty dessert that has a bottom layer of crust made from crumbled biscuits mixed with butter and sugar. The main filling is made from cream cheese, eggs, sugar, heavy cream and it might contain chocolate bits or fruits and on top of the cheesecake you might find icing, iced fruits, chocolate, nuts and all sorts of stuff like that.
There are recipes of cheesecake that involve baking and some that don't reqiure baking, just chilling in the fridge. If you make a cheesecake that has eggs and requires baking, you should still keep it in the fridge for a few hour for an impecable serving.
This dessert has a long and ancient history whose traces can found back to ancient Greece. The modern version of cheesecake has been invented in 1872 in New York and there is even a New York cheesecake.
Ingredients:
- For crust:
- biscuits - 150 grams
- butter - 130 grams
- sugar - 100 grams
- For the filling:
- sugar - 375 grams
- eggs - 5 pieces
- flour - 50 grams
- lemon juice - 2 tablespoons
- vanilla essence - 2 ml
- cream cheese - 300 grams
- For the icing:
- sour cream - 460 grams
- sugar - 100 grams
- lemon juice - 1 tablespoon
- vanilla essence - 2 ml
Instructions:
To make cheesecake i advise you too use a spring round pan. It will be very easy to take the cheesecake out of it and you have the best chances to make a perfect one.
First make the crust:
- Crumble the biscuits using a blender or a piece of baking paper and a rolling pin. Don't crumble them too much.
- Over the crumbled biscuits add melted butter and sugar and mix very well.
- Put the biscuit composition in the round spring pan which you can coat with a drop of oil. Using the base of a glass or a measuring cup press the biscuits all over the tray and its walls.
- Bake the crust in the heated oven, for 10 minutes, on medium heat and then let it cool a bit.
Make the filling:
- Use a mixer and mix very well cream cheese, sugar, lemon juice and vanilla extract.
- After all this mixture is done start adding one egg at the time. Add one egg, blend it in, then add another one and so on.
- At the end add flour and the cheese cream is done.
- Pour the cream into the pan, over the slightly cooled crust. Bake the cheesecake in the heated oven for 50-55 minutes until it gets very well tight together. Don't panic if after those 55 minutes the middle of your cheesecake still seems a little bit liquid. It's ok, it will harden once cooled.
While the cheesecake gets cooked prepare the icing:
- Mix the sour cream, sugar, vanilla essence and lemon juice. Blend it and your icing is done.
- After the cheesecake has baked, let it cool for 10 minutes and then pour the icing on it. Bake it again for another 10-15 minutes.
- After this time has passed i advise you to let the cheesecake cool in the oven because otherwise it might crack right in the middle.
- Let it cool completely then keep it in the fridge for at least 4 hours before you detach the edges of the tray.
- Serve it with a few strawberries on top.
