Cheese pie is a very nice and honest dessert. Every body likes cheese pie. In my country they make cheese pie with sweet cheese and salty cheese. My favorite is Cheese pie with sweet cheese and raisings.
Cheese pie
History shows us that the Greek people were the first to make pies, making a dough from flour, grease and water, filling it with meat. The Romans were a little bit more inventive and refined, filling their pies with mussles, fish, beef or chicken.
In the pharaohs pies you coulda've found wallnuts, honey and fruits. The first forms of bakery were apparently invented in ancient Egypt.
Ingredients:
- For the dough:
- flour - 500 grams
- sugar - 16 tablespoons
- eggs - 6 pieces
- cooking oil - 8 tablespoons
- vanilla essence - 2 ml
- baking powder - 4 grams
- lemon zest - 1 teaspoon
- sour cream - 100 ml
- Filling:
- cheese - 1 kg
- eggs - 4 pieces
- sour cream - 100 ml
- raisings - 200 grams
- lemon zest - one teaspoon
- semolina - 2 tablespoons
- sugar - 250 grams
- vanilla essence - 2 ml
- rum essence - 2 ml
Instructions:
Make the filling first:
- Moist the raising in 100 ml of hot water mixed with rum essence, so they are not dry when you mix them with the rest of the filling and have a nice rumy flavor.
- Mix the cheese with eggs, sour cream, sugar, semolina, lemon zest, vanilla essence and drained raisins. Mix everything very well and let it rest until you prepare the dough.
Dough:
- Mix the flour with baking powder.
- Mix the eggs with sour cream, vanilla essence, lemon zest, oil, sugar.
- Add drops of flour over the egg mixture. Add all the flour and form a dough.
- Start kneading the dough very well, then after it's done cut in half.
- Roll one half of the dough into a sheet, about 1 cm thick, the same size as the tray in which you are going to bake the pie, i used the oven's tray to bake my pie.
- Arrange the sheet of dough into the tray covered with baking paper. Bake it in the heated oven for 7 minutes, at medium heat.
- Take the tray out and put the filling over the dough. Even the cheese filling nicely.
- Then roll the second piece of dough and arrange it over the filling.
- Sting the pie, with a fork, from place to place, so the extra air gets out.
- Bake the pie, at medium heat, for 35-40 minutes.
- Take it out and coat the top layer with three egg yolks beaten. Put it back in the oven for 10 minutes.
- Let it cool and serve it.
